A glorious feast of a salad, this elevates kale to new heights. Marinating and massaging the kale softens it up and takes away that sharpness, so it is a perfect salad to try if you are still a little skeptical of kale. This salad is great as a side dish, but can be served as a main if you add some protein. A can of chickpeas, some poached eggs, or some left-over chicken would work perfectly.
Marinated kale with avo and roast veg
Ingredients
- 300 g chopped roasting veg of your choice we used butternut, peppers and red onion
- 1 large bunch of curly kale stems removed and roughly chopped
- 2 tbsp olive oil
- 2 tsp honey
- 1 garlic clove crushed
- 1/2 tsp salt
- juice and zest of 1 lemon
- 1 ripe avocado sliced
Instructions
- Preheat the oven to 200 C and roast your veg. Precook harder veg like butternut or carrots in the microwave for 7 – 10 minutes to speed up the process.
- Mix all the rest of the ingredients, accept for the avocado, together in a large bowl, and massage with your hands for around 5 minutes, until the kale leaves have started to wilt and everything is evenly coated.Leave to marinate for 30 minutes, or until your roast veg is ready
- Toss the veg with the marinated kale, and top with avocado slices. Enjoy!
