Banana ice cream with Tahini (or peanut butter) & dates

This version of Nice-cream (banana ice cream) tastes so similar to ice cream, that you could fool even the pickiest eaters into enjoying it. The addition of tahini or peanut butter adds a nutty, creamy mouthfeel, and some heart healthy fats. Dates add extra sweetness, but if you don’t like your ice cream very sweet you can omit those.

This recipe makes about 3 scoops, a decent portion for one as a treat. If you are serving it with e.g. a fruit salad or a brownie, one scoop per person would be a good portion size.

So how much better is Nice-cream compared to the real deal? I did a little comparison for you:

Nice-cream is much lower in calories, saturated fat, and sugar, and higher in fiber.

Of course the nutritional info of different brands of ice cream will vary, and that of different Nice-cream recipes. But no doubt, Nice-cream is a super smart swop for ice-cream.

And it tastes just as delicious, if not more delicious, than traditional ice-cream 😋

Ingredients
  

  • 1 med frozen banana (slice before freezing) a ripe banana works best
  • 1 tbsp Tahini peanut butter works well as a substitute
  • 1 tbsp milk of choice
  • 3 dates, chopped or 1 tbsp chopped pieces

Instructions
 

  • Place the frozen banana slices, tahini (or peanut butter), milk, and chopped dates into a powerful blender (e.g. Nutribullet).
  • Blend until smooth. If the mixture is struggling to blend, add another splash of milk (but be careful to not add too much).
  • If you want a soft serve texture, you can serve it right away. Otherwise, pop the blended mixture back in the freezer for about 2 hours for a firmer, scoopable texture. You can also freeze it indefinitely until you need it, but then it may need to thaw for 15 – 30 minutes before it will be soft enough to scoop.

    This literally blew my mind it was so good!!! I’d recommend letting the bananas defrost a bit before blending them and not overblending – it leaves some deliciously chewy bits.
