300gchopped roasting veg of your choice we used butternut, peppers and red onion
1large bunch of curly kalestems removed and roughly chopped
2tbspolive oil
2tsphoney
1garlic clovecrushed
1/2tspsalt
juice and zest of 1 lemon
1ripe avocadosliced
Instructions
Preheat the oven to 200 C and roast your veg. Precook harder veg like butternut or carrots in the microwave for 7 - 10 minutes to speed up the process.
Mix all the rest of the ingredients, accept for the avocado, together in a large bowl, and massage with your hands for around 5 minutes, until the kale leaves have started to wilt and everything is evenly coated.Leave to marinate for 30 minutes, or until your roast veg is ready
Toss the veg with the marinated kale, and top with avocado slices. Enjoy!
